I’m not sure where I found this recipe, but it looks like a really good one for fall. This could be easily adapted to be a crock pot recipe. 4-6 servings. 60 min. Ingredients:
1 cup split peas |
3 cups water |
2 cups onions, chopped |
2 garlic cloves, pressed |
1/4 cup olive oil |
2 bay leaves |
1 teaspoon ground cumin |
1/2 teaspoon cinnamon |
1/4 teaspoon cayenne |
2 cups vegetable broth |
2 teaspoons lemon juice |
1/2 cup cooked rice |
salt and pepper |
fresh parsley, chopped |
Directions:
1. Rinse peas. Cook in the 3 cups water (45 minutes). 2. Sauté onion and garlic in the olive oil. Add spices and sauté for 5-10 more minutes. Set aside. 3. When peas are cooked, stir in onion mixture and vegetable stock. Add lemon juice and rice. Season with salt and pepper. Serve topped with the fresh parsley. |
