Split Pea and Barley Soup |

Just a vegan soup I came up with this past winter. Freezes and reheats well. Adjust the amount of water for a thiner or ticker soup. Ingredients:
2 1/2 cups dried split peas |
1/2 cup pearl barley |
8 cups water |
1 onion, diced |
2 tablespoons garlic, minced |
olive oil |
2 teaspoons salt |
2 teaspoons cracked black pepper |
1/2 teaspoon cayenne |
1 teaspoon paprika |
Directions:
1. In large pot heat olive oil. 2. Sauté onion and garlic until brown. 3. Add water, peas, barley, salt, pepper, cayenne, and paprika. 4. Bring to boil. 5. Reduce heat, cover and cook on low (simmer) for 1 1/2 hours, stirring occasionally. 6. Serve hot. |
