Wrapping the grated potatoes in cheesecloth and squeezing out ALL the water ensures fluffy, white latkes and best of all, no splatters during frying! Ingredients:
5 lbs potatoes |
1 onion |
3 eggs |
salt and pepper |
oil (for frying) |
Directions:
1. Peel and grate potatoes and onion 2. Squeeze out in cheesecloth until only a stiff dough remains. 3. Add eggs, salt and pepper, mix well. 4. Form into balls and fry 2-3 minutes on each side, in hot oil. |
