Spirited Spiced Fruit Compote |

Warm fruit, delicious over waffles or as a side dish topped with crunchy granola, or topped with a scoop of vanilla ice cream as a dessert. Very versatile recipe. Ingredients:
2 cinnamon sticks broken into two inch pieces |
12 whole cloves |
3 quarter sized slices of fresh peeled ginger |
1 1/3 cups of orange juice |
1/3 cup of packed light brown sugar |
2/3 cup of raisins |
pinch of salt |
several grinds of fresh nutmeg |
1/3 cup of brandy or cointreau or use 1/4 cup of each (my fav) |
1 can of apricot halves drained |
1 can of sliced pears, drained |
1 can of sliced peaches, drained |
1 can of pitted dark sweet cherries, drained |
Directions:
1. Cut an 8 inch square double thickness of cheesecloth. 2. Put cinnamon sticks, cloves and ginger slices in the middle and bundle it into a bag and tie up with kitchen twine. 3. In a large sauce pan, combine the orange juice, raisins, brown sugar. 4. Add the spice bag, salt and nutmeg. 5. Bring to a boil. 6. Reduce heat and simmer for 10 minutes. 7. Add fruit and brandy/Cointreau and simmer for less than five minutes, just enough to heat the fruit thoroughly.. 8. Discard spice bag and serve fruit warm. 9. *as a topping for waffles or pancakes* 10. *as a topping for vanilla ice cream* 11. *in a dish topped with whipped cream and granola or crushed ginger snaps as a dessert* |
