SPIRAL APPLE DUMPLINGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the London Estate in Addison, Texas in 1991.
Ingredients:
2 cups granulated sugar
2 cups water
1/4 cup butter
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup shortening
2/3 cup milk
filling
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
3 cups shredded peeled cooking apples
Directions:
1. In a large saucepan combine sugar, water, butter, cinnamon and nutmeg.
2. Bring to boiling and boil 5 minutes then set aside.
3. For dough in a large mixing bowl combine flour, baking powder and salt.
4. Using a pastry blender cut in shortening until pea size then make well in center.
5. Add milk all at once and stir just until moistened.
6. Knead dough on a lightly floured surface until nearly smooth then roll out rectangle.
7. For filling combine sugar and cinnamon then set aside.
8. Sprinkle apples evenly over dough then sprinkle with sugar mixture.
9. Roll dough into spiral starting from a long side then pinch seams to seal.
10. Cut into twelve 1 thick pieces and place in rectangular baking pan.
11. Pour sauce over dumplings then bake at 350 for 50 minutes.
