Spinach With Sesame Dressing |

Tried and true. This recipe comes from my friend Karla who is an exception cook. This is one she perfected a few years back and it is so good. Enjoy Ingredients:
1 pound spinach |
3 tablespoons sesame seeds |
3 tablespoons soy sauce |
2 tablespoons sweet rice wine |
1 teaspoon granulated sugar |
Directions:
1. Wash spinach then cut off ends of stems. 2. Bring a large pot of water to a rolling boil and add spinach then boil 3 minutes until wilted. 3. Drain spinach in colander and run cold water over it. 4. Toast sesame seeds in a heavy skillet over medium high heat until browned. 5. While still warm grind seeds lightly in mortar and pestle. 6. Add soy sauce and grind again briefly then add wine and sugar then mix well. 7. Squeeze excess water from cooked spinach and chop coarsely. 8. Toss in a medium bowl lightly with dressing until coated. 9. Serve in small bowls chilled or at room temperature. |
