Spinach With Roasted Sesame Seed Dressing |

A Japanese recipe recommended to me by a friend. Ingredients:
1/3 cup sesame seeds |
1 teaspoon sugar |
1 1/2 teaspoons soy sauce |
1/4 cup dashi |
600 g spinach, trimmed |
Directions:
1. Toast the seeds in a dry, small frying pan over a medium heat. 2. Set 1 tsp of the seeds aside and blend, process or grind the rest until smooth. 3. Mix with sugar, sauce and dashi in a jar and shake well until sugar dissolves. 4. Wash spinach well. 5. Bring a saucepan of water to a boil and immerse the spinach for 30 seconds. 6. Drain and rinse under cold water. 7. Wrap the leaves in a bamboo mat, roll firmly and gently squeeze out the extra water. 8. Place on a plate and top with the dressing. |
