Spinach With Pine Nuts And Raisins |

This is very tasty and a great spinach dish with nuts and raisins. Enjoy Ingredients:
2-1/2 pounds spinach |
3 tablespoons olive oil |
2 small yellow onions minced |
4 tablespoons raisins plumped in hot water and drained |
4 tablespoons pine nuts toasted |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Rinse spinach well and remove stems. 2. Place in a large sauté pan with only the rinsing water clinging to the leaves. 3. Cook over medium heat then turning as needed until wilted just a few minutes. 4. Drain well and set aside then add olive oil to empty pan and place over medium heat. 5. Add onions and sauté until tender about 8 minutes. 6. Add spinach, raisins and pine nuts then sauté briefly to warm through. 7. Season with salt and pepper then serve warm or at room temperature. |
