Prep: 1 minute; Cook: 8 minutes. Ingredients:
4 teaspoons pine nuts |
1 teaspoon olive oil |
2 (7-ounce) packages fresh baby spinach |
1 teaspoon minced garlic |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/4 cup raisins |
Directions:
1. Place pine nuts in a large nonstick skillet over medium-high heat. Cook, stirring frequently, 3 minutes or until lightly toasted. Remove from pan, and set aside. 2. Heat oil in same pan over medium-high heat. Add spinach and garlic; cook, stirring occasionally, 3 to 4 minutes or just until spinach wilts. Sprinkle with salt and pepper; add pine nuts and raisins. Toss well. |
