Spinach With Little Meatball Soup |

Love soup and found a similar recipe and did not have it with me when I cooked this but remembered some of the ingredients so came up with this one, It is easy and so good Ingredients:
3 carrots diced or chopped |
1 large onion chopped |
1 red pepper chopped |
3 cloves garlic chopped |
1/4 cup olive oil |
3 (32 oz) chicken broth |
(add a little more water to equal about 7 qts of liquids) |
2-3 tbsp chicken base for soup (in jars) |
3/4 cup parmesan cheese |
1 (24 oz) frozen spinach pkg |
3/4 cup dried ane de pepe pasta |
salt |
pepper |
3 tbsp paprika |
3 tbsp italian seasoning |
1 tsp rosemary |
1 tsp thyme |
meatballs |
1 pkg (roll) ground white turkey meat (frozen section in stores) |
1/4 pound chop meat |
1/4 cup parmesan cheese |
salt, pepper to taste |
2 tsp paprika |
2 eggs |
2 garlic cloves minced well |
1/2-3/4 cup italian breadcrumbs |
Directions:
1. In 8 quart Dutch oven or stock pan, heat oil 2. Add onion, garlic, pepper, carrots, and caramelize (about 5 minutes) 3. Add broth, water and chicken base 4. Bring to boil 5. Add all other ingredients (up to meatball's), 6. Cover, lower to simmer and cook about 1 hour. 7. Meanwhile in bowl: 8. Mix, meats, cheese, seasonings and garlic 9. Add enough breadcrumbs to hold together (not too soft but not too dry) 10. Remove cover and roll the meat into about 1/2 size balls and drop into soup. 11. Cover and cook an additional 20 minutes. 12. Serve with toasted bread, or warm buttered bread and topped with Parmesan Cheese |
