Spinach with Hot Bacon Dressing |

Ingredients:
4 slice(s) bacon, cooked and crumbled |
1/2 cup(s) butter or margarine, cubed |
1-1/2 teaspoon(s) celery seed |
3/4 cup(s) cider vinegar |
3 tablespoon(s) cornstarch |
3/4 teaspoon(s) dry mustard |
3 eggs, lightly beaten |
3 hard boiled eggs, sliced |
2 cup(s) milk |
1 teaspoon(s) salt |
1 cup(s) sugar |
torn, fresh baby spinach |
Directions:
1. In a saucepan, combine the sugar, cornstarch, celery seed, salt and mustard. Gradually stir in milk and vinegar. Add butter. Cook and stir until mixture comes to a boil; cook and stir for 1-2 minutes or until thickened and bubbly. 2. Stir a small amount of hot liquid into beaten eggs; return all to the pan. Cook and stir 1 minute longer. Stir in bacon. Serve immediately over spinach and egg slices. 3. Yield: About 4 cups |
