Spinach With Garbanzo Beans

Ingredients:
3 tablespoons olive oil
4 garlic cloves, halved
2 slices french baguette
2 (10-ounce) packages (or 2 bunches) spinach, rinsed and drained
1/2 cup cooked garbanzo beans
sea salt, to taste
2 teaspoons spanish paprika
1/4 teaspoon ground cumin
french baguette, sliced
Directions:
1. Heat a large braising pan or skillet over medium-high heat. Add the oil, and when it is hot, add the garlic and 2 slices of baguette. Reduce the heat to medium and cook, turning the garlic and bread occasionally, until light golden brown, about 1 minute. Remove the garlic and bread to drain on paper towels, leaving the remaining oil in the pan.
2. Add the spinach, garbanzo beans and salt to the pan. If the spinach is dry, add 2 tablespoons of water. Cover the pan with a lid and reduce the heat to medium-low and cook for 2 to 3 minutes, stirring occasionally.
3. Meanwhile, purée the cooked garlic, baguette slices, Spanish paprika, and cumin in a food processor or blender with 2 to 3 tablespoons of water.
4. When the spinach has wilted, add the purée to the pan. Mix well and add a little more water if the spinach mixture appears dry. Cover and simmer the mixture for about 20 minutes, or until the flavors blend and the juices evaporate.
5. Spoon the spinach and garbanzo beans into a shallow bowl and serve hot with slices of baguette, or slices of bread fried in olive oil.
6. *You may use dried garbanzo beans that have been cooked, or canned garbanzo beans, drained.
