Spinach White Bean Soup With Red Potatoes |

I took a recipe and changed it, based on personal tastes and what I had on-hand. The result is a light, filling healthy recipe that can be adapted to your own tastes. Ingredients:
4 cups vegetable broth |
2 cups water |
10 ounces spinach, chopped |
1 (14 1/2 ounce) can diced tomatoes |
1 garlic clove |
1 lb red potatoes, diced |
1 (14 1/2 ounce) can great northern beans |
Directions:
1. In a large stock pot, bring broth and water to a boil. Add the tomatoes and potatoes and garlic, and return to a simmer. Cover and cook until potatoes are tender, 10 to 15 minutes. Stir in beans and spinach until heated through and spinach is wilted, about 2 minutes. Season with pepper to taste. |
