Great finger food Ingredients:
crust |
2-8 oz. pkgs. cream cheese, softened |
1 1/2 cups butter, softened |
2 1/2 cups flour |
1/2 tsp. salt |
filling |
5 strips bacon, cooked and crumbled, reserving 1 tbls. bacon grease |
1/4 cup onion, finely chopped |
2 garlic cloves, minced |
1 10 oz. pkg. frozen chopped spinach, thawed and well drained |
1 cup ricotta or cottage cheese |
1/8 tsp. ground nutmeg |
salt and pepper, to taste |
1 egg, beaten |
salsa, optional |
Directions:
1. Preheat oven to 400 2. In mixing bowl, beat cream cheese and butter with hand mixer until creamy 3. In another mixing bowl, combine flour and salt 4. Slowly add flour to creamed mixture(dough will be stiff) 5. Turn onto floured surface and gently knead 10 times 6. Cover and refrigerate 2 hours 7. Saute onion and garlic in bacon grease until tender 8. Remove from heat, stir in bacon, spinach, cottage cheese, nutmeg, salt and pepper 9. Cool to room temp. 10. On lightly floured surface, roll dough to 1/8 inch thick 11. Cut into 3inch circles 12. Brush edges with egg 13. Put 1 heaping tsp. filling on each circle 14. Fold over and seal edges 15. Prick tops with fork 16. Brush with egg 17. Bake 10-12 minutes or until golden brown 18. Serve with salsa |
