This recipe was created as a dip but it does well as a spread on toast or a wrap. I've even used it as a salad dressing! The corn is optional and can be substituted with chopped nuts to add a different texture to this creamy dip. Also, if it is too thick, some sour cream or a splash of milk can be added. Ingredients:
8 oz cream cheese |
9 oz canned chopped spinach, drained |
4 1/2 oz chunk light tuna |
9 oz whole kernel corn |
Directions:
1. Drain spinach, tuna and corn 2. Chop nuts if added 3. Mix all ingredients together in a medium sized bowl 4. Add salt, pepper, hot sauce to taste 5. May be served chilled 6. Makes approx. 15 quarter-cup servings |
