This looks like a fancy appetizer, it easy to make, but working with phyllo dough always make a dish look fancy. ha ha It's delicious! And if there are left overs, IF, they are nice next to some scrambled eggs for breakfast. Read more . :o) Ingredients:
fresh spinach |
olive oil |
salt and pepper |
2 cups mozzarella cheese |
1 cup ricotta cheese |
1 onion (chopped) |
1tsp. garlic powder |
9 t. butter (melted) |
30 sheets phyllo dough |
Directions:
1. In a large frying pan add 2T. Olive oil ( Med-high Heat) 2. Add Spinach and stir so it all gets coated in the olive oil 3. It will shrink quite a bit but you can add more spinach to it as it shrinks and turns dark green 4. *You can use frozen or canned spinach as well but I find fresh cooked has the best flavour and aroma 5. Empty cooked spinach into large bowl and add cheese, onion, garlic powder, salt and pepper. 6. Preheat oven 350 degrees. 7. In a large baking pan grease the bottom with the butter. 8. Phyllo Dough: Un roll and fit two - three sheets into the bottom of a greased pan. 9. Brush it with butter several times 10. *I use a plastic knife to cut triangle shapes 11. Add mixture of Spinach 12. Add each remaining layer of phyllo and brush with butter between each layer. 13. Cook 40 -45 min. 14. Let cool ,then cut out shapes, and serve. |
