Tortellini, spinach, and tomatoes are a nice combination in this tasty soup. Ingredients:
3/4 cup chopped onion |
1 teaspoon minced garlic |
1 tablespoon olive oil |
2 (14 1/2 ounce) cans reduced-sodium chicken broth |
2 cups water |
1 teaspoon sugar |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 (9 ounce) package refrigerated cheese tortellini |
1 (14 1/2 ounce) can diced tomatoes, undrained |
Directions:
1. In a large saucepan, saute onion, and garlic in oil until tender. 2. Add the broth, water, sugar, salt, and pepper, and bring to a boil. 3. Add tortellini, cook 7-9 minutes or unttil tender, stirring occasionally. 4. Reduce heat, stir in tomatoes, and spinach, and heat through. 5. Just before serving, sprinkle with Parmesan cheese. |
