This is elegant and so full of wonderful tastes. Goes great with cornbread or a light dinner salad. Enjoy Ingredients:
1 bunch fresh spinach |
4 large cans of chicken broth |
9 ounces fresh cheese filled spinach tortellini |
1 cup cooked rice |
2 whole chicken breasts |
1 medium red bell pepper |
1/2 pound sliced mushrooms |
2 teaspoons tarragon leaves |
1/4 teaspoon ground pepper |
1/8 teaspoon salt |
freshly grated parmesan cheese |
Directions:
1. Wash and destem the spinach then chop into strips and set aside. 2. Wash and deseed the pepper. 3. Dice pepper and add to the spinach. 4. Skin chicken breast and cut into strips. 5. Bring broth to boil in a covered pan. 6. Add tortellini to broth and boil gently uncovered 8 minutes. 7. Add all vegetables, chicken and seasonings then bring to boil over high heat. 8. Reduce heat to simmering then cover and cook until chicken is no longer pick in the middle. |
