Ingredients:
2 cups of cooked spinach |
4 eggs |
4 tablespoons melted butter |
1 teaspoon salt |
1/8 teaspoon pepper |
1/8 teaspoon paprika |
1/2 cup milk |
2 tablespoons butter |
2 tablespoons flour |
1/4 teaspoon salt |
1/4 cup milk |
Directions:
1. White Sauce: Melt butter in a saucepan; add flour and salt, stirring constantly until smooth. 2. Add the milk, stirring constantly and cook for 5 minutes. 3. Put the spinach through a course sieve. 4. Then beat your eggs just slightly; add the melted butter, seasonings, and milk to the eggs. 5. Add the spinach. 6. Pour the mixture into greased baking dish, ramekins, or pyrex glass custard cups, and place in a pan of hot water. 7. Bake at 325°F until firm. 8. Serve with a white sauce if desired. |
