My husband loves tomatoes, even the ones that have no flavor you get at the grocery in the winter. I went looking for something different to do with them and found this online. These were so easy and so good. I've changed it a little to suit our tastes. Read more ...Adapted from Ingredients:
1 package stouffers spinach souffle, defrosted |
8 small to medium tomatoes |
1 cup shredded parmesan, divided |
salt and pepper |
Directions:
1. Preheat oven to 350 2. Cut 1/2 inch slice from top of each tomato 3. Scoop out pulp, leaving shell intact 4. Salt shell and turn upside down to let moisture drain for 10 minutes 5. In mixing bowl, combine spinach, 1/2 cup cheese and pepper 6. Fill each tomato with spinach mixture 7. Sprinkle remaining cheese over top 8. Place tomatoes in muffin tin 9. Bake 25 minutes |
