I adore stuffed tomatoes with a great steak! This is a simple recipe that brings great results! Enjoy! :) Ingredients:
4 medium tomatoes |
salt |
1/3 c cooked brown rice |
1/3 c frozen spinach, thawed |
1/4 t chopped garlic |
2 t grated parmesan |
1 egg |
more parmesan to sprinkle on top |
Directions:
1. Preheat oven to 400˚. 2. Cut tops off tomatoes. 3. Using a spoon, scoop out the insides and discard (or save for another recipe). 4. Sprinkle lightly with salt and turn upside down on a paper towel to drain for about 10 minutes. 5. Combine remaining ingredients, and fill tomatoes. 6. Top with a little more Parmesan. 7. Bake 15-20 minutes. |
