Great spin on traditional deviled eggs. I had these at a shower a couple of weeks ago...mmmmm good! Ingredients:
12 hard-cooked eggs, peeled |
3 ounces cream cheese, softened |
1/3 cup grated parmesan cheese |
1/3 cup sour cream |
2 tablespoons chopped scallions |
1/2 seasoned salt, if desired |
1/4 teaspoon cayenne pepper |
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry |
fresh chives for garnish, optional |
Directions:
1. Cut eggs in half lengthwise. 2. Remove yolks and reserve. 3. In a medium bowl, blend together cream cheese, Parmesan cheese, sour cream, scallions, reserved yolks, seasoned salt, if desired, and pepper. 4. Stir in spinach and mix well. 5. Spoon or pipe into egg white halves and garnish with chives, if desired. 6. Cover and refrigerate until firm, about 1 hour. Serve cold. |
