chicken and spinach Ingredients:
104 g extra lean ham, diced |
1 tsp olive oil |
219 g onion |
204 g chopped spinach, washed and drained well |
1 egg, slightly beaten |
22 g seasoned bread crumbs |
1/2 tsp. garlic salt |
382 g chicken breasts, skinned, and boned |
1 dash salt |
1 dash black pepper |
Directions:
1. Heat the oil and cook onion and until soft. Add ham, stir for 2-3 minutes. With slotted spoon, transfer ham and onion to a large bowl. Add spinach, egg, bread crumbs, and garlic salt; toss gently. With a small, sharp knife, cut a pocket in the thick side of each breast half. Stuff lightly with spinach mixture and close with wooden toothpick. 2. Season lightly with salt and pepper. Wrap in foil and bake in the oven at 190 degrees, for 30 minutes, or until the inside is no longer pink. 3. Serve with lemon wedge to squeeze over top |
