Spinach, Strawberry & Asparagus Salad |

A combination of a few different recipes to get the mix my family likes. Ingredients:
2 cups fresh asparagus, trimmed and cut into 1-inch pieces |
2 cups fresh spinach |
2 cups fresh strawberries, sliced |
1/2 small red onion, thinly sliced |
1/2 cup pecans, chopped & toasted (can be candied if preferred) |
2 tablespoons balsamic vinegar |
1/2 tablespoon lemon juice (lime juice can be substituted if preferred) |
1 tablespoon honey |
Directions:
1. Blanch asparagus & cool. 2. Toss the spinach, asparagus, onion, pecans and strawberries together in a bowl. 3. In a small bowl, combine the dressing ingredients and mix well. 4. Pour dressing over salad and toss. 5. Chill before serving. |
