SPINACH STEW This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Justin, Texas in 2002. Ingredients:
2 small white onions chopped |
2 tablespoons vegetable oil |
2 tomatoes peeled and sliced |
1 green bell pepper chopped |
2 pounds fresh spinach chopped |
1 teaspoon salt |
2 chili peppers sliced |
4 tablespoons peanut butter |
Directions:
1. In heavy skillet sauté onions in moderately hot oil until golden then stir in tomatoes and pepper. 2. After 2 minutes add spinach, salt and hot pepper then cover and simmer five minutes. 3. Thin peanut butter with several tablespoons of warm water to make a smooth paste. 4. Add to the pot then continue cooking 15 minutes stirring frequently being careful not to scorch. 5. Add small amounts of water as necessary so stew does not stick to the pan. |
