A sunflower seed base with spinach and tomatoes, served over rice. Vegetarian. Ingredients:
1/2 c. canola oil |
1 small onion |
1 t. chopped garlic |
10 oz. frozen chopped spinach |
1 c. sunflower seeds |
1/4 c. water |
3 tomatoes |
1/2 can tomato paste |
1/2 t. cayenne pepper |
1 t. salt |
Directions:
1. Put sunflower seeds in food processor and grind till fine. Add water and process to paste. 2. Cook spinach (microwave appx 4 mins). 3. Chop onions and sautee in oil for 2 minutes, then add garlic. 4. Add sunflower seeds to onions and oil. Stir until broken up a little. 5. Add spinach, tomatoes (chopped, can of stewed works too), tomato paste, salt and cayenne (to taste). Stir until well blended. 6. Reduce heat to low, cover and simmer for 20-30 mins. 7. Serve over rice, if desired. |
