This is a very easy appetizer that can be served hot or cold. Very tasty and holds up well at a party. Always a favorite. Can be made ahead and stored in fridge up to 3 days. Happy Munching.
Ingredients:
4 tbsp. margarine
2 pkg. frozen chopped spinach- thaw and drain
4 cups grated cheese - swiss, mozzarella or mild cheddar or mix
1 cup flour
1 tbsp. baking powder
1 cup milk
3 eggs
onion chopped fine (optioinal)
bacon, fried and chopped fine (optional)
Directions:
1. Mix flour, baking powder, milk, and eggs.
2. Add cheese and spinach and optional items if desired.
3. Mix well.
4. Melt margarine and put in bottom of square pan (9x9)
5. Bake at 350 degrees for 30 minutes.
6. It will rise.
7. Check with knife, it should come our clean.
8. Serve hot or cold
