Spinach Soup With Corn in Clear Broth |

Cooking Light Ingredients:
1 tablespoon olive oil |
1/2 cup onion, chopped |
1/2 cup bell pepper, chopped |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 teaspoon garlic, minced |
4 cups chicken broth |
2 cups corn |
6 ounces spinach, fresh baby |
Directions:
1. Put oil in a hot pot and add onion, bell pepper, salt, pepper and garlic. Saute 2 minutes. 2. Add broth and corn. Bring to a boil. 3. Add spinach and wilt. 4. Serve. |
