Spinach Soup With Corn in Clear Broth

Ingredients:
1 tablespoon olive oil
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon garlic, minced
4 cups chicken broth
2 cups corn
6 ounces spinach, fresh baby
Directions:
1. Put oil in a hot pot and add onion, bell pepper, salt, pepper and garlic. Saute 2 minutes.
2. Add broth and corn. Bring to a boil.
3. Add spinach and wilt.
4. Serve.
