Spinach Soup (Spenatsoppa) |

Scandinavians sometimes top this velvety soup with sour cream. Ingredients:
1 tablespoon butter |
1 lb spinach |
1/4 cup all-purpose flour |
2 cups chicken broth |
1 teaspoon salt |
1/4 teaspoon white pepper |
1/4 teaspoon ground allspice |
2 cups milk |
1/2 cup whipping cream |
Directions:
1. Melt butter in a medium saucepan over medium heat. Add spinach; stir until heated through. 2. Stir in flour until moistened. Increase heat to high and slowly stir in chicken broth; cook and stir until thickened. 3. Remove from heat and puree in a blender or food processor; pour puree into saucepan. 4. Add salt, white pepper, allspice, milk and cream. Stir over medium heat just until soup comes to a boil. 5. Serve immediately. |
