This soup is fantastic on a chilly day. It's spicy and has alot of spinach and beans. Ingredients:
10 potatoes cubed and cooked |
2 cans diced tomatoes |
2 chorizo sausage |
1 can kidney beans |
1 can garbanzo beans |
1 large bag of baby spinach |
2 medium onions |
2 large cans of chicken broth |
Directions:
1. Cook your cubed potatoes and drain and set aside 2. saute chopped onion in 1 tbs olive oil 3. add skinned and cubed chorizo and saute 5-10 minutes on low heat 4. add tomatoes, beans, potatoes, and spinach 5. pour chicken broth over top 6. cover and bring to boil 7. reduce heat to low and let soup slow cook for 2 hrs. 8. stir occasionally |
