if using frozen spinach use three cups or 2 boxes Ingredients:
6 cups spinach |
1 onion |
1 potato |
1/2 tablespoon olive oil |
1/2 tablespoon butter |
6 cups of chicken broth |
Directions:
1. saute onion in oil and butter. Add chicken broth and thinly sliced potato. Simmer until potato is soft. Quickly add fresh spinach and simmer until just reduce. Remove from heat and blend in batches until smooth. |
