A delicious slice served hot or cold. Made without egg yolks, it's the perfect way to use up whites after making custard or ice cream. Serves four with salad for a light lunch or dinner. Ingredients:
250 g frozen spinach, thawed |
1 medium onion, finely chopped or grated |
1 cup self raising flour |
1 cup reduced-fat cheddar cheese |
5 egg whites |
1/2 cup olive oil |
1 teaspoon mixed herbs |
salt and pepper |
Directions:
1. Heat oven to 180°C. 2. Grease a 20x15 cm baking dish. 3. Combine all ingredients and mix to form a batter. The batter should be spreadable rather than pourable. Alter the consistency with additional flour if too wet; with oil if too dry. 4. Bake for 45 minutes or until lightly browned. |
