Spinach adds a colorful and nutritious surprise to this creamy slaw. Ingredients:
1 (6-ounce) package fresh baby spinach, coarsely chopped |
1 (10-ounce) package angel hair coleslaw |
1 large carrot, shredded (about 1 cup) |
1/3 cup thinly, vertically sliced red onion (about 1/2 small) |
1/3 cup light mayonnaise |
1/2 cup low-fat sour cream |
2 tablespoons red wine vinegar |
1 tablespoon sugar |
3/4 teaspoon salt |
1/2 teaspoon black pepper |
Directions:
1. Combine first 4 ingredients in a large bowl. In a small bowl, combine mayonnaise and next 5 ingredients. Add to spinach mixture; toss gently to coat. Cover and chill at least 1 hour. |
