Spinach Sauteed with Garlic, Figs, and Honey (Emeril Lagasse) |

Ingredients:
2 tablespoons olive oil |
2 tablespoons thinly sliced garlic |
1/4 cup sliced dried figs |
1/4 cup chicken stock |
1 pound baby spinach |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 teaspoons honey |
Directions:
1. In a medium skillet over medium-high heat, add the olive oil and, when hot, add the garlic and cook until lightly toasted, about 30 seconds. Add the figs and chicken stock and cook until stock is nearly completely reduced, about 2 minutes. Add the spinach and cook, stirring, until wilted, about 2 minutes. Season with the salt and pepper and drizzle with the honey just before serving. |
