Found a recipe online years ago for spinach salad with a warm, bacon-onion dressing...it was too plain for me, so I added tomatoes, mushrooms, olives, bacon, and crumbled blue or feta cheese. MMMM good! Ingredients:
4 cups (about 1/3 pound) torn young spinach leaves |
2 cups coarsely shredded lettuce |
6 slices bacon, fried crisp and crumbled |
1 c grape tomatoes |
1/2 tub sliced fresh mushrooms |
1/2 c ripe or kalamata olives, drained |
3 hard-boiled eggs |
salt and pepper to taste |
3 tbsp. bacon drippings |
6 tbsp. wine vinegar |
2 tsp. sugar |
1 tsp. grated onion |
1 purple onion, thinly sliced and separated into rings. |
feta cheese or blue cheese to crumble on top |
Directions:
1. Combine spinach, lettuce and bacon. 2. Chop eggs and add to salad 3. Add mushrooms, olives and tomatoes 4. Sprinkle salad with salt and pepper and chill until ready to serve. 5. At serving time, heat bacon drippings, vinegar, sugar and grated onion together. 6. Add onion rings 7. Toss hot dressing with salad 8. Top with crumbled feta or blue cheese |
