1 bunch (1lb.) fresh spinach |
1/4 lb. fresh mushrooms, sliced |
2 green onions,sliced diagonally, including green tops |
1 cup fresh alfalfa or bean sprouts |
1 avocado, diced |
1/4 cup salted sunflower nuts |
--------dressing |
1/4 cup soy sauce |
2 tablespoons white wine vinegar |
1 teaspoon sugar |
1/4 teaspoon pepper |
Directions:
1. Wash spinach well and dry. Remove stems. 2. Combine spinach with mushrooms, green onions, and sprouts in chilled salad bowl. 3. Top with avocado and sunflower nuts. 4. Just before serving, mix soy sauce, vinegar and sugar. Stir until sugar is dissolved. Add pepper. 5. Drizzle dressing over salad and toss gently. |
