Spinach Salad with Pears and Blue Cheese |

This elegant spinach salad contains endive in addition to the baby spinach, pears, blue cheese and toasted walnuts, and is a great salad for entertaining. Ingredients:
1 cup walnuts, chopped |
2 tablespoons lemon juice |
1 teaspoon dijon mustard |
1 teaspoon honey |
1/4 cup extra-virgin olive oil |
salt and pepper |
1 (5 oz.) bag baby spinach |
2 endives (8 oz.), leaves separated |
1 pear, cored and sliced |
1/2 cup crumbled blue cheese |
Directions:
1. Preheat oven to 350°F. Spread nuts on a lined baking sheet and toast until fragrant, 7 minutes, shaking once. Let cool. 2. Whisk lemon juice, mustard, honey and oil in a medium bowl. Season with salt and pepper. 3. Place spinach, endives and pear in a large serving bowl and drizzle with dressing. Toss to coat. Sprinkle salad with nuts and cheese, or serve with nuts and cheese on the side. Serve immediately. |
