An incredible combination of flavors! Definitely a hit! If you don't have kalamata olives, or don't like them, then just leave them out - do not substitute regular black olives (the flavor will not go well). Ingredients:
1 large naval orange |
1/4 cup citrus vinaigrette (approximately; see separate recipe) |
8 cups spinach leaves torn |
2 scallions very thinly sliced |
1/3 cup feta cheese finely crumbled |
16 kalamata olives |
Directions:
1. Peel the orange and separate the sections. Remove any course membranes, then cut each section in half and place in a small bowl. Toss with a teaspoon or so fo dressing, just enough to coat them lightly. 2. Place the spinach and scallions in a large salad bowl. Just before serving, toss with approximately 1/4 cup dressing, just enough to coat the leaves. 3. Divide the spinach onto 4 salad plates. Sprinkle on the oranges, feta cheese, and olives. Serve immediately. 4. From Vegetarian Classics by Jeanne Lemlin |
