Spinach Salad with Goat Cheese, Mushrooms and Shallots in a Balsamic Reduction

This is my favourite salad ever! Its delicious, healthy, and easy to make. It is modified from a recipe found at
Ingredients:
8 tablespoons shallots, diced
2 tablespoons extra virgin olive oil
2 cups crimini mushrooms, sliced
1 tablespoon cane sugar
1 tablespoon dried thyme
3 tablespoons balsamic vinegar
6 cups baby spinach leaves
1 oz goat cheese
Directions:
1. Sauté the shallots in the olive oil for three minutes.
2. Add the mushrooms and cane sugar, stirring for one minute.
3. Add the thyme and the balsamic vinegar. Allow to boil vigorously for 4 minutes. Serve warm or at room temperature.
4. Meanwhile, divide spinach between two plates. Top each with half of the mushroom mixture and half of the goat cheese.
