Spinach Salad with Garlic Dressing |

Ingredients:
5 cups spinach |
1 medium onion, chopped |
1/2 cup diced celery |
4 hard-boiled eggs, chopped |
1/4 teaspoon pepper |
1 tablespoon capers |
1 teaspoon salt |
1/2 teaspoon pepper |
1/4 teaspoon cayenne |
1/4 teaspoon dry mustard |
2 tablespoons vinegar (rice or regular) |
1 tomato, pureed |
1 dash tabasco sauce |
1 cup canola oil |
2 -5 cloves garlic, crushed |
Directions:
1. -Salad-. 2. boil eggs and chop. 3. wash spinach well and dry, tear into small pieces. 4. in a large bowl combine spinach, onion, celery, eggs, salt and pepper. 5. chill well. 6. just before serving pour garlic dressing over salad and toss lightly. 7. garnish with capers. 8. -Dressing-. 9. combine all ingriedients and puree with moulinex or hand blender. |
