Spinach Salad with Fresh Cherries |

Substitute a drained16.5-ounce can of Queen Anne cherries if fresh cherries aren't in season. Ingredients:
1/4 cup red wine vinegar |
2 tablespoons olive oil |
2 tablespoons water |
1 tablespoon sugar |
1 1/2 teaspoons whole-grain dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
2 cups pitted fresh rainier cherries |
1 (7-ounce) package baby spinach |
1/3 cup (1.3 ounces) crumbled blue cheese |
2 tablespoons nutlike cereal nuggets (such as grape-nuts) |
Directions:
1. Combine first 7 ingredients in a medium bowl; stir well with a whisk. Add cherries, tossing gently; cover and chill 1 hour. 2. Toss spinach and cheese together in a large bowl. Pour cherry mixture over spinach mixture. Toss gently. Divide salad among 6 individual salad plates. Sprinkle each serving with cereal. Serve immediately. |
