Spinach Salad With Feta Cheese and Strawberry Dressing |

Modified version of an LA recipe. Perfect for summer! Ingredients:
1 pint strawberry, hulled |
3 tablespoons rice vinegar |
1 tablespoon olive oil |
1 teaspoon minced tarragon |
1 tablespoon snipped chives |
1 teaspoon lemon juice |
1 garlic clove, minced |
1/4 cup water |
salt and pepper |
8 cups baby spinach leaves |
4 slices red onions |
4 kiwi, peeled and sliced |
1/4 cup feta cheese |
Directions:
1. Puree the strawberries with a pulsing motion in a food processor till smooth. 2. Stir in the rice vinegar, olive oil, tarragon, chives, lemon juice, garlic, water, salt, and pepper. 3. Divide the spinach, red onion, and kiwi among 4 chilled serving plates. 4. Sprinkle the salads with feta cheese. 5. Serve with the strawberry dressing. |
