Perfect for fall and winter holiday meals. Ingredients:
1 lb fresh spinach, washed, stems removed, and torn into bite-sized pieces |
1/2 cup chopped walnuts |
3/4 cup dried cranberries (craisins) |
2/3 cup extra virgin olive oil |
1/3 cup balsamic vinegar |
1 garlic clove, minced |
3/4 tablespoon kosher salt |
1/2 teaspoon fresh coarse ground black pepper |
Directions:
1. In a serving bowl, toss together the salad ingredients. 2. In a jar with a tight fitting lid, shake together the dressing ingredients until well blended. 3. Dress the salad and serve. |
