Spinach Salad With Bacon Dijon Mustard Dressing |

This is a great Salad that aside from the spinach leaves can be changed to your liking. We like spinach leaves, shredded cheddar cheese, sliced purple onion, hard boiled eggs, salt & pepper. The dressing is amazing but use very little! It’s rich, sweet & a little goes a long way! The dressing will last about 3 weeks in the refrigerator in an air tight container. This was given to me from my SIL Heather. Ingredients:
1 lb bacon |
1 1/2 cups white sugar |
3 teaspoons cornstarch |
1/2 teaspoon salt |
1/4 cup water |
1/2 cup white vinegar |
2 tablespoons dijon mustard |
Directions:
1. Cook bacon till crisp. Drain and crumble. 2. Put all other ingredients in a sauce pan, put on med heat and whisk till combined. 3. Bring to just a boil and cook for 5 to 7 min till starting to thicken, stirring frequently. 4. Take off heat and let cool to room temperate. |
