Spinach Salad w/Green Onion Vinaigrette |

This is a great Spinach Salad. This is one of the many ways I get my kids to eat spinach. It is also great to serve to guests. Ingredients:
1 head iceberg lettuce, torn |
1 package baby spinach leaves |
1/2 small red onion, thinly sliced |
10 white mushrooms, sliced |
1/2 lb grated swiss cheese |
1/2-1 lb cooked crumbled bacon (to taste) |
1/3 cup white wine vinegar |
1/3 cup sugar |
3/4 teaspoon salt |
3/4 cup canola oil |
3 green onions, chopped |
1/2 teaspoon dried mustard |
1 teaspoon celery seed |
Directions:
1. SALAD: Toss iceberg lettuce, spinach, onion, mushroom slices, grated Swiss chees and bacon in large bowl. 2. DRESSING: Combine all ingredients in a blender and blend well. 3. Just before serving pour dressing over the salad and toss. 4. You can also serve the dressing to the-side of the salad. |
