This easy spinach salad tossed in homemade vinaigrette makes a impressive side dish for any meal. Ingredients:
1 tablespoon balsamic vinegar |
3 tablespoons olive oil |
1 teaspoon light brown sugar |
2 tablespoons lemon juice |
1/4 teaspoon kosher salt |
5 cups spinach |
1/3 cup pecans |
2 ounces goat cheese (1/2 cup) |
Directions:
1. In a large bowl, whisk together vinegar, olive oil brown sugar, lemon juice, and kosher salt. Add spinach to the bowl and toss well. Divide among 4 plates. Chop pecans and crumble goat cheese. Top each serving with some of the nuts and cheese. |
