A spinach salad with a great twist my friend Ellen K and I made up. So simple and light and hard to resist! Ingredients:
1 10 ounce bag of uncooked spinach |
4 slices of bacon |
1 tablespoon of cider vinegar |
2 teaspoons of sugar |
1.2 teaspoon of mustard |
1 finely chopped red onion |
Directions:
1. Wash spinach well andd cut off any tough stems 2. Tear spinach to bite-sized pieces in a bowl 3. Cook with a teaspoon of vegetable oil bacon on high for 5 minutes 4. With spatula remove bacon; crumble; set aside 5. To bacon dripping, add vinegar, sugar, and mustard 6. Mix well,; cook for about 3 minutes 7. To spinach add onion, dressing, and onion 8. Cook on High, for 2 minutes, or until spinach wilts 9. Enjoy! |
