Southern Living Ingredients:
1 (10 ounce) package frozen chopped spinach, thawed |
1 cup cooked rice |
1 cup shredded sharp cheddar cheese |
1/2 cup minced onion |
1/4 cup milk, plus |
2 tablespoons milk |
2 eggs, beaten |
1/2 teaspoon dried thyme |
1/2 teaspoon dried rosemary |
1/2 teaspoon worcestershire sauce |
1/8 teaspoon salt (to taste) |
1/8 teaspoon pepper (to taste) |
1 tablespoon butter or 1 tablespoon margarine |
Directions:
1. Drain thawed spinach, and squeeze out excess water (I use kitchen towels for this). 2. Combine spinach and the remaining ingredients except butter; mix well. 3. Transfer mixture to a greased 1 quart casserole; dot with butter. 4. Bake in a preheated 350° oven for 25-30 minutes, until well heated. |
