This is a healthier version of my mom's yummy Spinach Pie without the bacon and the pie shell. You can use fresh or frozen spinach for this recipe. Chopped frozen spinach will save some time preparing this dish, however the quiche will not be as bright green as It gets with fresh spinach leaves. You may replace the ham with 1/2 cup of bacon bits which will increase the fact content a lot but the flavour will be absolutely delish!
Ingredients:
9 oz spinach
2 oz broccoli
4 oz ham
30 tbsp egg whites
1 pinch salt
1 pinch pepper
Directions:
1. Pre-heat the oven to 375F
2. Chop up the spinach and broccoli
3. Add the spinach and broccoli to a mixing bowl
4. Cut the ham into little cubes or little squares if you use deli ham
5. Add the ham to the mixing bowl
6. Add the egg whites to the mixing bowl
7. Add salt, pepper and any other seasoning (I love Aromat) you like to the mixture and mix everything well until spinach and broccoli are evenly coated with egg whites and the ham mixed in nicely
8. Take out a round cake pan approx. 11 in diameter and place a sheet of baking paper in there
9. Pour the mixture into the cake pan and bake for appox. 20 - 30 mins
10. The quiche is finished when the contents in the pan are no longer runny and you can see that the surface is solid
