Yummy variation on a restuarant classic. Good with salsa. Ingredients:
8 flour tortilla |
10 oz. frozen spinach |
1 cup onion, chopped |
1 1/2 cup low-fat cottage cheese |
1 chicken breast |
Directions:
1. Saute onion and chicken in a non-stick skillet with pam until done. 2. Chop chicken very small. Mix with drained spinach. 3. Over medium heat in a large skillet, put tortilla, 1/4 spinach mix , 1/4 of cheese, and top with another tortilla. Cook on both sides 1 minute. 4. Cut into 8 wedges, four wedges per serving. |
